4 Ways To Amp Up Your Chicken | Grillaholics

4 WAYS TO AMP UP YOUR CHICKEN

Ahh- the notorious boneless, chicken breast. If you're anything like me and eat a copious amount of chicken, you get extremely bored, FAST. Honestly, think about the last time that you were excited to eat some bland chicken, because I can't! However, what if i told you that I have a couple tips and tricks that will make your chicken great again? 

1. Marinate, Baby!

This is probably the easiest thing that you can do to amp up your chicken! Just throw some chicken in a delicious concoction before you leave for work, and when you come back, whoop there it is! One of my favorite mash-ups are:

  • ½ cup olive oil
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon paprika
  • ½ teaspoon cumin
  • ¼ teaspoon cayenne pepper
  • 2 cloves garlic, chopped
  • 3 tablespoons chopped onion
  • ½ cup chopped fresh parsley
  • 1½ cups beer

This method is one that will be sure to leave you mouth watering. As your chicken is still cooking, brush on some whisky honey, soy sauce, and red pepper flakes for an added kick of flavor! Make sure you make a little extra sauce for dipping! 

3. Brine Before Cooking

Brining your chicken will ensure that your meat will have extra flavor and will be juicy and tender! There's a couple methods that you can pick between; the dry brine and the wet brine. Both will have an equally delicious outcome, but the wet brine will take a few extra steps. So if you're want the faster method, look for a dry brine.

How to Dry Brine:

All you need is to heat some salt, sugar, and spice solution and then cool and chill it overnight. Coat your chicken breast in salt and pepper and also let that sit overnight! Bring the chicken to room temp before grilling and make sure to pat it dry! (No one wants soggy chicken) 

Preheat grill to high heat on one side and medium low on the other.  (every grill is a little different) When the grill is ready, place chicken skin side down on the high heat side and grill with the lid open for 4-5 minutes.  Watch for flare-ups from the fat.  You can use a squeeze bottle of water to take care of them or just keep watch and move the chicken around.  When time is up move chicken skin side down to the low heat side and cook 6-7 minutes more with the lid closed.

Flip the chicken over, cook on the high heat side with the lid open for 4-5 minutes, then on the low side for about 6-7 minutes. Chicken will be done when it reaches 160F. Let chicken sit for 5 minutes before serving!

4. Dry Rub It Out
